Today is the National Day Celebration party for Joey in school, so I made her a simple snack to bring to school to share with her friends - Kiwi Pockets!
The simple ingredients include garlic & onions finely chopped..
Potatoes cut into small cubes..
Ham cut into small pieces...
And of course some Zespri Kiwifruits!
First, cut the kiwifruit into halves, scoop out the flesh from the skin and dice up the kiwifruit. Keep the kiwi skin on one side for use later.
Then stir fry all the ingredients (garlic, onion, potatoes, chicken, ham) with a little oil and salt until they are fragrant and fully cooked. Use a spoon and scoop a small portion of the fried ingredients into each kiwi skin pocket. Then scoop a teaspoon of diced kiwifruits on top, and IT'S DONE! Isn't it super duper easy?? =D
This is a simple snack that is both visually-appetizing and healthy, and definitely a hit at parties. Try making it at home! :)
